        窯藏的形式分成土藏和洞藏。土藏白酒是將釀造好一點的原漿白酒埋到土窖里邊,保存一段時間后拿出來。土藏的純糧酒不僅有五谷的香味外,還摻雜著泥土的氣息,二味交叉,香甜可口。而窯藏純糧酒在窯藏的過程當中,吸取石頭的氣息味兒,香醇也十分的與眾不同。

        窖藏白酒的化學反應鑒于原漿白酒未加上純糧酒之外的一切化學物質,其酒分子依然保持著非常好的可靠性,在窯藏的過程當中,容器里的酒在適宜的溫度下通過器皿感受著窖內干燥度合適的氣體,悄然發生三種轉變:

        1、蒸發功效:剛蒸出的酒一般帶有氯化氫、碳醇等易揮發的硫酸鹽,并且也帶有代烴等刺激高的揮發性物質。這種物質在窯藏期內可以當然蒸發。一般通過六個月的窯藏后,基本上檢驗出不來酒里硫酸鹽的出現,使白酒的刺激大大減輕。

        2、分子間的質子化:酒精和水全是分子,經窯藏后,使乙醇分子和水分的排序逐漸理清,進而增強了乙醇分子的桎梏力,減少了乙醇分子的活躍度,使白酒口感越來越溫和,此外,純糧酒中別的香氣物質的分子也會帶來以上質子化功效。當酒里質子化的分子群提升,得到拘束的分子越大,口感也就越柔軟、溫和。

        3、化學反應:純糧酒在窯藏環節中能夠產生緩慢化學反應。便是酒精在醇酸酯化反應環節中形成一個新的脂類。窯藏時間越長產生的脂類也就越多,酒的香味也就越大。其實就是通常所說的去雜提鮮。因而窯藏其實就是儲藏的一個過程。而家中收藏自己喜歡的純糧酒不僅滿足了個人的愛好,都是中華酒文化的一種體現。但家中儲藏標準限制,可因人自宜,住房子是下邊室,假如在鄉村有地下室那就更好了,這樣的地方儲藏酒,可以跟地脈想接,其空氣濕度和酒窯比較接近,但是不能過于濕冷,經其歲月運轉,吸其日精月華,假以時日,所藏之酒必成其為佳品

        2、如想要通過收藏白酒來提高質量,其盛酒容器佳選是紫砂壺,次之陶、瓷。紫砂的密度界于陶、瓷中間,有利于純糧酒吸氣。假如僅僅是為了能個人收藏,玻璃瓶子也可以的,它不僅能維持原先的質量,又不可意使瓶內純糧酒酒精揮發。

        如何保存純糧酒
        How to Save Pure Grain Wine
        1、檢查一下你窖藏,把瓶塞重新扭緊一下,避免因瓶塞松脫“跑酒”。

        2、保鮮膜將瓶塞細心包裹,用透明膠布纏緊,然后把食用蠟放入不銹鋼容器里升溫,待蠟溶化成液態后,把酒瓶子顛倒過來,將瓶塞直接從容器中浸一下開展蠟封。封臘自然就是陰涼干燥處,溫濕度適合就行了,時長不受限制。
